Good canapés are one of our favourite things about weddings, parties and events. A miniature meal in itself, they’re designed not only to be a taste sensation but to keep you going (especially where alcohol is concerned).
Below we’ve asked Spook, London’s most sought-after caterer, for their top 10 creations and we were lucky enough to taste them (believe us when we say - these are not only works of art - but their flavours are out of this world!).
Jerusalem Artichoke Crisp with Taleggio, Jerusalem Artichoke Purée & Truffle Honey
We served this most recently at a showcase event in Old Street. It always goes down really well - we think it’s because it’s light but packs a serious flavour punch.
Buttermilk Chicken Pops with Chilli Aioli
One for the fun weddings and events, the buttermilk chicken pop takes you right back to your childhood (only way more elegant and delicious this time around). They work perfectly with refreshing cocktails, such as our Rosé Cooler with Lillet Rosé vermouth, elderflower liqueur, fresh grapefruit and mint.
Crab, Avocado, Chilli & Coriander on Black Rice Cracker
A light and gluten free favourite of ours, this crab number which we served recently at a charity summer garden party at a private house in Hampshire, works perfectly alongside English Nyetimber Classic Cuvee.
Goats Cheese Crostini with Hazelnuts, Honey, Thyme
A delicious and popular vegetarian option, the whipped goats cheese is light and complemented perfectly by the crushed hazelnuts and thyme leaves.
Rare Fillet Steak with Fondant Potato & Béarnaise Sauce
The winter season’s most popular, a mini steak and chips in one mouthful. Some say it’s even better than the whole meal! Goes well with a rich red!
Butternut Squash Arancini, Taleggio, Sage Pesto & Crispy Sage
A perfectly formed, arancini sphere stuffed with butternut squash and taleggio cheese, topped with sage pesto and a crispy sage leaf is always a winner, especially at evening events where guests are particularly peckish.
Potato Rosti with Chorizo & Quails Egg
One of our most popular canapés at weddings all year round, the perfectly soft-boiled quails egg finishes it off to perfection.
Buffalo Ricotta Croustade with Lemon & Broad Bean
A beautiful and light canapé which we served at a summer wedding in the Cotswolds alongside Gusbourne sparkling rosé.
Soy & Mirin Cured Salmon, Beetroot Puree & Micro Cress
This asian inspired home-cured salmon canapé goes really well with our Eastern Influence cocktail on a hot summer’s day and is perfect for luxury brand launches. (This was definitely one of my favourites!)
Compressed Watermelon Cubes, Kalamata Olive, Preserved Lemon Salsa & Mint Feta Crumb
Our Head Chef’s favourite, a real flavour delight, is our watermelon canapé, served most recently at a jewellery design company dinner in Surrey.
